Ferula assafoetida is an herbaceous, monoecious, perennial plant of the family Umbelliferae, also called Apiaceae.

Asafetida comes from the milky sap of a giant fennel plant.

Asafoetida grows wild in most of Western Asia. The plant thrives, also, in continental climates where the temperature goes to extremes.

Asafoetida is approved for food use in the USA.
